Simple recipe for roasting carrots with garlic and herbs until tender and slightly caramelized.

- 1 pound carrots, peeled and cut into uniform pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- In a large bowl, toss the cut carrots with olive oil, minced garlic, thyme, rosemary, salt, and pepper until evenly coated.
- Spread the seasoned carrots in a single layer on a baking sheet.
- Roast for 25 to 30 minutes, stirring halfway through, until the carrots are tender and lightly browned.
- Serve immediately.
Notes
- For a sweeter flavor, add a drizzle of maple syrup before roasting.
- You can substitute fresh herbs for dried herbs, using about one tablespoon of each.
