Garlic Chicken Gnocchi Skillet

Description

A quick skillet meal featuring chicken, gnocchi, and a garlic sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 lb package potato gnocchi
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add minced garlic to the same skillet and cook for 1 minute until fragrant.
  4. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Stir in the gnocchi and heavy cream. Cook according to gnocchi package directions, usually about 3-5 minutes, until the gnocchi floats and is tender.
  6. Return the cooked chicken to the skillet.
  7. Stir in the Parmesan cheese until the sauce thickens slightly.
  8. Taste and adjust seasoning with salt and pepper if needed.
  9. Stir in fresh parsley before serving.

Notes

  • You can substitute chicken thighs for chicken breasts.
  • For a lighter sauce, use half-and-half instead of heavy cream.
