Description
A quick skillet meal featuring chicken, gnocchi, and a garlic sauce.
Ingredients

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 lb package potato gnocchi
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add minced garlic to the same skillet and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Stir in the gnocchi and heavy cream. Cook according to gnocchi package directions, usually about 3-5 minutes, until the gnocchi floats and is tender.
- Return the cooked chicken to the skillet.
- Stir in the Parmesan cheese until the sauce thickens slightly.
- Taste and adjust seasoning with salt and pepper if needed.
- Stir in fresh parsley before serving.
Notes
- You can substitute chicken thighs for chicken breasts.
- For a lighter sauce, use half-and-half instead of heavy cream.
