Garlic Butter Shrimp and Rice

Description

A simple recipe for shrimp cooked in garlic butter served over cooked rice.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • 2 cups cooked white rice

Instructions

  1. Season the shrimp lightly with salt and pepper.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and cook for about 1 minute until fragrant. Do not brown the garlic.
  4. Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side until pink and opaque.
  5. Pour in the chicken broth and lemon juice. Bring the liquid to a simmer.
  6. Cook for 1 minute, scraping up any browned bits from the bottom of the pan.
  7. Stir in the chopped parsley.
  8. Serve the garlic butter shrimp and sauce immediately over the cooked rice.

Notes

  • Use medium-high heat for quick cooking of the shrimp.
  • You can substitute vegetable broth for chicken broth if desired.
