An easy and delicious cake recipe featuring canned fruit cocktail.

- 1 (15 ounce) can fruit cocktail, undrained
- 1 (15.25 ounce) package yellow cake mix
- 1/3 cup vegetable oil
- 3 large eggs
- 1/2 cup chopped pecans or walnuts (optional)
- 1 cup confectioners’ sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
- Pour the undrained fruit cocktail into a large bowl. Add the cake mix, vegetable oil, and eggs.
- Beat with an electric mixer on medium speed for 2 minutes. Stir in the nuts, if using.
- Pour the batter into the prepared pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, make the glaze. In a small bowl, whisk together the confectioners’ sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled cake.
- Allow the glaze to set before slicing and serving.
Notes
- You can use any flavor of cake mix you prefer.
- Add a pinch of cinnamon or nutmeg to the batter for extra flavor.
- Serve the cake with whipped cream or ice cream.
