  • 1 (15.25 ounce) package yellow cake mix
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1 cup confectioners’ sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
  2. Pour the undrained fruit cocktail into a large bowl. Add the cake mix, vegetable oil, and eggs.
  3. Beat with an electric mixer on medium speed for 2 minutes. Stir in the nuts, if using.
  4. Pour the batter into the prepared pan.
  5. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  7. While the cake cools, make the glaze. In a small bowl, whisk together the confectioners’ sugar, milk, and vanilla extract until smooth.
  8. Drizzle the glaze over the cooled cake.
  9. Allow the glaze to set before slicing and serving.
