A refreshing and festive layered frozen treat perfect for the 4th of July.
Ingredients

- 1 cup boiling water
- 3 ounces cherry gelatin
- 1 cup cold water
- 1 cup boiling water
- 3 ounces berry blue gelatin
- 1 cup cold water
- 1 pint vanilla ice cream, softened
Instructions
- In a medium bowl, whisk together 1 cup boiling water and cherry gelatin until dissolved. Stir in 1 cup cold water.
- Pour half of the cherry mixture into 8 (5-ounce) paper cups. Freeze for 30 minutes.
- Refrigerate remaining cherry mixture.
- In a medium bowl, whisk together 1 cup boiling water and berry blue gelatin until dissolved. Stir in 1 cup cold water.
- Pour half of the berry blue mixture into 8 (5-ounce) paper cups. Freeze for 30 minutes.
- Refrigerate remaining berry blue mixture.
- Spoon softened vanilla ice cream over the frozen berry blue layer in each cup. Freeze for 30 minutes.
- Pour remaining refrigerated cherry mixture over the ice cream layer. Freeze for 30 minutes or until firm.
- Pour remaining refrigerated berry blue mixture over the cherry layer. Freeze for at least 2 hours or until firm.
- To serve, peel off paper cups.
Notes
- Ensure each layer is partially frozen before adding the next to maintain distinct colors.
- Softening the ice cream makes it easier to spoon.
