Simple recipe for baked cheesecake bars featuring a graham cracker base and fresh strawberry topping.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar (for crust)
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup granulated sugar (for filling)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 2 cups fresh strawberries, sliced
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
- Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Pour in melted butter and mix until combined. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
- While the crust bakes, beat the softened cream cheese and 1 cup sugar in a large bowl until smooth.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until just combined. Do not overmix.
- Pour the cream cheese mixture over the warm crust.
- Arrange the sliced strawberries evenly over the top of the batter.
- Bake for 35 to 40 minutes, or until the edges are set and the center has only a slight jiggle.
- Let the bars cool completely in the pan on a wire rack.
- Chill the bars in the refrigerator for at least 4 hours, or preferably overnight, before cutting into squares.
Notes
- For easier slicing, use the parchment paper overhang to lift the entire block of cheesecake out of the pan before cutting.
- If you prefer a smoother topping, you can gently fold half of the strawberries into the batter before pouring it over the crust.
