These patties feature a flaky texture combined with Jamaican curry spices, chickpeas, and kale.
Ingredients

- 1 15-ounce can chickpeas, rinsed and drained
- 1 cup kale, finely chopped
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 tablespoons Jamaican curry powder
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil for frying
Instructions
- Mash the chickpeas in a bowl until mostly smooth but still slightly chunky.
- Add the chopped kale, breadcrumbs, onion, curry powder, flour, cumin, salt, and pepper to the mashed chickpeas.
- Mix all ingredients thoroughly until combined.
- Form the mixture into 6 equal-sized patties.
- Heat the vegetable oil in a large skillet over medium heat.
- Carefully place the patties in the hot oil.
- Cook for 4 to 5 minutes per side, until golden brown and heated through.
- Remove patties from the skillet and place on a paper towel-lined plate to drain excess oil.
Notes
- For extra flakiness, chill the formed patties for 15 minutes before frying.
- Serve these patties on buns or alongside a fresh salad.
