Description
A simple, layered casserole featuring three types of beans with taco seasoning.

- 1 (10 ounce) can enchilada sauce
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1 (1 ounce) package taco seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup crushed tortilla chips
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
- In a large bowl, combine the enchilada sauce, black beans, kidney beans, pinto beans, and taco seasoning mix. Stir until everything is evenly coated.
- Pour the bean mixture into the prepared baking dish, spreading it into an even layer.
- Sprinkle the cheddar cheese and Monterey Jack cheese evenly over the top of the bean mixture.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Remove the casserole from the oven. Sprinkle the crushed tortilla chips over the melted cheese.
- Bake for an additional 5 minutes, or until the chips are lightly toasted.
- Let the casserole cool for 5 minutes before serving.
Notes
- You can substitute any combination of canned beans you prefer.
- For a spicier dish, add a dash of hot sauce to the bean mixture.
