- 4 cups corn kernels (fresh or frozen and thawed)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper (any color), diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled cotija cheese (optional)
Instructions
- Place the corn kernels in a large bowl.
- Add the halved cherry tomatoes, chopped red onion, diced bell pepper, and chopped cilantro to the bowl with the corn.
- In a small separate bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and black pepper to make the dressing.
- Pour the dressing over the corn and vegetable mixture.
- Gently toss all ingredients until everything is evenly coated.
- If using, sprinkle the crumbled cotija cheese over the salad.
- Serve immediately or chill for 30 minutes before serving for better flavor.
Notes
- If using frozen corn, thaw it completely before mixing.
- You can substitute sour cream for mayonnaise for a tangier dressing.
- Add a diced avocado just before serving for extra creaminess.
