Description

A simple recipe for a moist carrot cake made without any flour, using oats instead.


Ingredients

  • 1 cup rolled oats
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)
  • Cream Cheese Frosting ingredients: 8 ounces cream cheese, 1/2 cup unsalted butter, 3 cups powdered sugar, 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour (or line with parchment paper) an 8-inch round cake pan.
  2. In a food processor, pulse the rolled oats until they resemble a coarse flour.
  3. In a large bowl, whisk together the oat flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  4. Add the grated carrots, oil, and eggs to the dry ingredients. Mix until just combined. Do not overmix.
  5. Fold in the chopped walnuts, if using.
  6. Pour the batter into the prepared cake pan.
  7. Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  9. Prepare the frosting: Beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
  10. Once the cake is completely cool, spread the frosting evenly over the top.

Notes

  • You can substitute pecans for walnuts if you prefer.
  • For a finer texture, process the oats longer until they are closer to a fine flour consistency.
  • If you skip the frosting, the cake keeps well covered at room temperature for two days.
