  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 medium onion, chopped
  • 1 celery stalk, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat.
  3. Add onion, celery, and bell pepper to the skillet. Cook until softened, about 5 minutes.
  4. Stir in garlic, thyme, salt, and pepper. Cook for 1 minute until fragrant.
  5. Add the uncooked rice and beef broth to the skillet. Stir well.
  6. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until the liquid is absorbed and the rice is tender.
  7. Remove from heat and let stand, covered, for 5 minutes before fluffing with a fork and serving.

Notes

  • For richer flavor, substitute half the water in the broth with liquid smoke.
  • You can substitute ground pork or sausage for the ground beef.
