Ingredients

  • 1 cup sparkling water or club soda
  • Ice cubes
  • Mint sprigs for garnish
  • Cucumber slices for garnish

Instructions

  1. Combine chopped cucumber and mint leaves in a blender.
  2. Blend until smooth.
  3. Strain the mixture through a fine-mesh sieve into a pitcher, pressing to extract maximum liquid. Discard solids.
  4. Stir in lime juice and honey or agave nectar (if using).
  5. Fill glasses with ice cubes.
  6. Pour the cucumber mint mixture into the glasses, filling them about halfway.
  7. Top with sparkling water or club soda.
  8. Garnish with mint sprigs and cucumber slices.
  9. Serve immediately.
