Ingredients

- 2 cups chopped cucumber
- 1/2 cup fresh mint leaves
- 1/4 cup lime juice
- 2 tablespoons honey or agave nectar (optional)
- 1 cup sparkling water or club soda
- Ice cubes
- Mint sprigs for garnish
- Cucumber slices for garnish
Instructions
- Combine chopped cucumber and mint leaves in a blender.
- Blend until smooth.
- Strain the mixture through a fine-mesh sieve into a pitcher, pressing to extract maximum liquid. Discard solids.
- Stir in lime juice and honey or agave nectar (if using).
- Fill glasses with ice cubes.
- Pour the cucumber mint mixture into the glasses, filling them about halfway.
- Top with sparkling water or club soda.
- Garnish with mint sprigs and cucumber slices.
- Serve immediately.

- Adjust sweetness to your preference.
- For a stronger mint flavor, muddle the mint leaves before blending.
- You can make the cucumber mint base ahead of time and store it in the refrigerator for up to 2 days.
