A refreshing, non-alcoholic drink combining cool cucumber, spicy ginger, and fresh mint.
Ingredients

- 1 cup cucumber, chopped
- 1 inch fresh ginger, peeled and sliced
- 10 mint leaves
- 1/2 lime, juiced
- 1 tablespoon simple syrup (or to taste)
- 1 cup sparkling water or club soda
- Ice cubes
Instructions
- Place the chopped cucumber, sliced ginger, and mint leaves into a sturdy glass or cocktail shaker.
- Muddle the ingredients gently until the cucumber releases its juice and the mint is fragrant. Do not over-muddle the mint.
- Add the lime juice and simple syrup to the mixture. Stir well.
- Fill a serving glass with ice cubes.
- Strain the cucumber-ginger-mint mixture into the serving glass.
- Top with sparkling water or club soda.
- Stir briefly and serve immediately.
Notes
- For a less spicy ginger flavor, use a smaller piece of ginger.
- Adjust simple syrup amount based on your preference for sweetness.
- If you do not have simple syrup, mix equal parts sugar and hot water until dissolved, then cool.
