A simple recipe for tender chicken cooked in a slow cooker with a sweet and savory honey garlic sauce.

- 2 lbs boneless, skinless chicken breasts or thighs
- 1/2 cup soy sauce
- 1/2 cup honey
- 1/4 cup ketchup
- 2 tablespoons apple cider vinegar
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/4 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Instructions
- Place chicken in the slow cooker.
- In a medium bowl, whisk together soy sauce, honey, ketchup, apple cider vinegar, minced garlic, ginger, and pepper.
- Pour the sauce mixture over the chicken in the slow cooker.
- Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
- Remove chicken from the slow cooker and shred or keep whole.
- In a small bowl, whisk together cornstarch and cold water to make a slurry.
- Stir the slurry into the remaining sauce in the slow cooker.
- Cook on high for 5 to 10 minutes, stirring occasionally, until the sauce thickens.
- Return the chicken to the slow cooker and toss to coat with the thickened sauce.
- Serve hot.
Notes
- Serve this dish over rice or with steamed vegetables.
- For a thicker sauce, increase the cornstarch slightly.
