Description

A simple recipe for creamy banana French toast cooked slowly in a slow cooker.


Ingredients

  • 1 loaf (about 12 slices) French bread, cut into 1-inch cubes
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 ripe bananas, sliced
  • Powdered sugar for dusting (optional)
  • Maple syrup for serving (optional)

Instructions

  1. Lightly grease the inside of a 5-quart or larger slow cooker.
  2. Arrange the bread cubes evenly in the bottom of the slow cooker.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon until well combined.
  4. Pour the egg mixture evenly over the bread cubes. Gently press the bread down to soak up the liquid.
  5. Arrange the sliced bananas over the top of the bread mixture.
  6. Cover the slow cooker and cook on low for 3 to 4 hours, or on high for 1 1/2 to 2 hours, until the custard is set and the top is lightly browned.
  7. Serve warm, dusted with powdered sugar and drizzled with maple syrup, if desired.

Notes

  • You can prepare the mixture the night before, refrigerate it, and cook it the next morning.
  • For a firmer texture, you can cook on high for the first hour and then switch to low for the remaining time.
