Description
A simple recipe for creamy banana French toast cooked slowly in a slow cooker.

- 1 loaf (about 12 slices) French bread, cut into 1-inch cubes
- 6 large eggs
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 ripe bananas, sliced
- Powdered sugar for dusting (optional)
- Maple syrup for serving (optional)
Instructions
- Lightly grease the inside of a 5-quart or larger slow cooker.
- Arrange the bread cubes evenly in the bottom of the slow cooker.
- In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon until well combined.
- Pour the egg mixture evenly over the bread cubes. Gently press the bread down to soak up the liquid.
- Arrange the sliced bananas over the top of the bread mixture.
- Cover the slow cooker and cook on low for 3 to 4 hours, or on high for 1 1/2 to 2 hours, until the custard is set and the top is lightly browned.
- Serve warm, dusted with powdered sugar and drizzled with maple syrup, if desired.
Notes
- You can prepare the mixture the night before, refrigerate it, and cook it the next morning.
- For a firmer texture, you can cook on high for the first hour and then switch to low for the remaining time.
