Simple recipe for making cheese enchiladas quickly in an air fryer.
Ingredients

- 6 corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1/2 cup enchilada sauce, plus more for topping
- 1 tablespoon vegetable oil
- 1/4 cup water
Instructions
- Mix the Monterey Jack and cheddar cheeses in a bowl.
- Lightly warm the tortillas in a microwave for 15 seconds to make them pliable.
- Spoon about 2 tablespoons of the cheese mixture down the center of each tortilla.
- Roll the tortilla tightly and place it seam-side down in the air fryer basket. Repeat with remaining tortillas.
- In a small bowl, mix the 1/2 cup enchilada sauce with the water. Pour this mixture evenly over the rolled tortillas in the air fryer basket.
- Sprinkle any remaining cheese over the top of the tortillas.
- Air fry at 375F (190C) for 8 to 10 minutes, or until the cheese is melted and bubbly and the tortillas are slightly crisp.
- Serve immediately with extra enchilada sauce if desired.
Notes
- If your tortillas crack when rolling, you can briefly dip them in the warm enchilada sauce mixture before filling.
- For crispier edges, ensure the tortillas are not overlapping too much in the air fryer basket.
