Description

Simple recipe for making cheese enchiladas quickly in an air fryer.


Ingredients

  • 6 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup enchilada sauce, plus more for topping
  • 1 tablespoon vegetable oil
  • 1/4 cup water

Instructions

  1. Mix the Monterey Jack and cheddar cheeses in a bowl.
  2. Lightly warm the tortillas in a microwave for 15 seconds to make them pliable.
  3. Spoon about 2 tablespoons of the cheese mixture down the center of each tortilla.
  4. Roll the tortilla tightly and place it seam-side down in the air fryer basket. Repeat with remaining tortillas.
  5. In a small bowl, mix the 1/2 cup enchilada sauce with the water. Pour this mixture evenly over the rolled tortillas in the air fryer basket.
  6. Sprinkle any remaining cheese over the top of the tortillas.
  7. Air fry at 375F (190C) for 8 to 10 minutes, or until the cheese is melted and bubbly and the tortillas are slightly crisp.
  8. Serve immediately with extra enchilada sauce if desired.

Notes

  • If your tortillas crack when rolling, you can briefly dip them in the warm enchilada sauce mixture before filling.
  • For crispier edges, ensure the tortillas are not overlapping too much in the air fryer basket.
