- 1 pound penne pasta
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 10 ounces fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- Cook penne pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes.
- Add garlic to the skillet and cook for 1 minute until fragrant.
- Stir in chopped artichoke hearts and cook for 3 minutes.
- Add spinach to the skillet in batches, stirring until it wilts down.
- Pour in heavy cream and chicken broth. Bring the mixture to a gentle simmer.
- Reduce heat to low. Stir in Parmesan cheese until the sauce is smooth.
- Season with salt and pepper.
- Add the cooked penne pasta to the skillet and toss to coat evenly with the sauce.
- Serve immediately.
Notes
- For a thicker sauce, simmer for a few extra minutes before adding the cheese.
- You can substitute vegetable broth for chicken broth if preferred.
