Description
A simple one-pan meal featuring chicken, mushrooms, and spinach in a creamy sauce.

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 8 oz cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cups fresh spinach
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
Instructions
- Season chicken pieces with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
- Add mushrooms to the same skillet and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
- Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese until the sauce thickens slightly.
- Return the cooked chicken to the skillet.
- Add spinach in batches, stirring until wilted into the sauce.
- Taste and adjust seasoning if needed. Serve immediately.
Notes
- You can substitute chicken thighs for breasts if you prefer.
- For a lighter sauce, use half-and-half instead of heavy cream.
