Description

A simple one-pan meal featuring chicken, mushrooms, and spinach in a creamy sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 8 oz cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Season chicken pieces with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Add mushrooms to the same skillet and cook until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
  6. Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese until the sauce thickens slightly.
  7. Return the cooked chicken to the skillet.
  8. Add spinach in batches, stirring until wilted into the sauce.
  9. Taste and adjust seasoning if needed. Serve immediately.

Notes

  • You can substitute chicken thighs for breasts if you prefer.
  • For a lighter sauce, use half-and-half instead of heavy cream.
