Description

A simple, no-cook sauce made from avocado, herbs, and lemon juice tossed with pasta.


Ingredients

  • 12 oz pasta (spaghetti or linguine)
  • 2 ripe avocados
  • 1/2 cup fresh basil leaves
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 1/4 cup fresh lemon juice
  • 1/4 cup water (or pasta cooking water)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta according to package directions. Reserve about 1/2 cup of the cooking water before draining.
  2. While the pasta cooks, combine the avocados, basil, olive oil, garlic, lemon juice, salt, and pepper in a food processor or blender.
  3. Blend until the mixture is completely smooth. Add the reserved pasta water, one tablespoon at a time, until the sauce reaches your desired creamy consistency.
  4. Drain the pasta and return it to the pot.
  5. Pour the avocado sauce over the hot pasta. Toss well to coat everything evenly.
  6. Serve immediately.

Notes

  • If the sauce seems too thick, add more pasta water until it loosens.
  • You can add a pinch of red pepper flakes for a little heat.
  • For a brighter flavor, use slightly more lemon juice.
