- 1 cup butter, softened
- 1 cup creamy peanut butter
- 2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 6 cups crisp rice cereal
- 1 (10 ounce) package miniature marshmallows
- 1/4 cup butter
- 1/2 cup milk
- 1 cup semi-sweet chocolate chips
- 1/2 cup rainbow sprinkles
Instructions
- Line a 9×13 inch pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, beat the softened butter, peanut butter, confectioners’ sugar, and vanilla extract until smooth.
- Stir in the crisp rice cereal until evenly coated. Press this mixture firmly into the prepared pan.
- In a medium saucepan, melt 1/4 cup butter over low heat. Add the marshmallows and milk. Stir constantly until the marshmallows are completely melted and the mixture is smooth.
- Remove the marshmallow mixture from the heat. Stir in the chocolate chips until melted and smooth.
- Pour the chocolate mixture over the cereal base. Sprinkle the rainbow sprinkles evenly over the top.
- Press the topping down lightly with wax paper. Let the squares set at room temperature for 2 hours, or chill for 1 hour until firm.
- Lift the squares out of the pan using the parchment overhang. Cut into squares before serving.
Notes
- For easier cutting, chill the finished squares completely before slicing.
- You can substitute crunchy peanut butter for creamy if you prefer texture.
