  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Wrap the outside bottom of a 9-inch springform pan with heavy-duty aluminum foil.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the prepared springform pan.
  3. Bake the crust for 10 minutes. Remove from the oven and let it cool slightly.
  4. In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth.
  5. Beat in the cooled coffee and vanilla extract. Mix until just combined.
  6. Beat in the eggs one at a time, mixing just until each egg is incorporated. Do not overmix.
  7. Gently stir in the heavy cream.
  8. Pour the batter over the cooled crust.
  9. Place the springform pan into a larger roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan (this creates a water bath).
  10. Bake for 50 to 60 minutes, or until the edges are set but the center still jiggles slightly.
  11. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
  12. Remove the cheesecake from the water bath and let it cool completely on a wire rack.
  13. Refrigerate for at least 6 hours, or preferably overnight, before serving.

  • Use strong, cooled espresso or very strong brewed coffee for the best flavor.
  • Make sure your cream cheese is fully softened to prevent lumps.
