Simple, no-bake energy bites featuring coconut and matcha green tea.
Ingredients

- 1 cup rolled oats
- 1/2 cup shredded unsweetened coconut
- 1/4 cup smooth almond butter
- 2 tablespoons maple syrup
- 1 tablespoon chia seeds
- 1 teaspoon matcha green tea powder
- 1/4 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine all ingredients in a medium bowl.
- Mix well until a uniform dough forms.
- If the mixture is too dry, add a teaspoon of water or milk.
- Roll the mixture into small, bite-sized balls (about 1 inch diameter).
- Place the bites on a plate lined with parchment paper.
- Refrigerate for at least 30 minutes before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to one week.
- You can roll the finished bites in extra shredded coconut for coating.
