A hearty and flavorful Cobb salad with chicken, bacon, eggs, and avocado.
Ingredients

- 4 cups chopped romaine lettuce
- 2 cups cooked chicken breast, chopped
- 6 slices bacon, cooked and crumbled
- 2 hard-boiled eggs, chopped
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled blue cheese
- 1/4 cup red onion, thinly sliced
- For the Dressing: 1/2 cup olive oil, 1/4 cup red wine vinegar, 1 tablespoon Dijon mustard, 1 clove garlic minced, salt and pepper to taste
Instructions
- In a large bowl, combine chopped romaine lettuce, cooked chicken, crumbled bacon, chopped eggs, diced avocado, halved cherry tomatoes, crumbled blue cheese, and sliced red onion.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
- Pour the dressing over the salad ingredients.
- Toss gently to combine all ingredients.
- Serve immediately.
Notes
- For a quicker preparation, use pre-cooked chicken and pre-cooked bacon.
- Adjust the amount of blue cheese to your preference.
- You can add other vegetables like cucumber or bell peppers if desired.
