Description
A traditional, creamy banana pudding recipe featuring vanilla wafers and meringue topping.

- 6 large eggs, separated
- 1 1/2 cups granulated sugar, divided
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 3 cups whole milk
- 1 tablespoon vanilla extract
- 4 large ripe bananas, sliced
- 1 box (11 ounces) vanilla wafers
- 1/2 teaspoon cream of tartar
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Make the custard: In a medium saucepan, whisk together egg yolks, 1 cup of the sugar, flour, and salt. Gradually whisk in the milk until smooth.
- Cook the custard over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 8 to 10 minutes. Do not boil.
- Remove the custard from the heat and stir in the vanilla extract. Let it cool slightly, about 15 minutes.
- Assemble the pudding: Arrange a layer of vanilla wafers in the bottom of a 9×13 inch baking dish. Top with a layer of sliced bananas. Pour half of the cooled custard over the layers. Repeat with another layer of wafers, the remaining bananas, and the rest of the custard.
- Make the meringue: In a clean, dry bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/2 cup of sugar and the cream of tartar, beating until stiff, glossy peaks form.
- Spread the meringue evenly over the top of the pudding, making sure to seal the meringue to the edges of the dish.
- Bake for 12 to 15 minutes, or until the meringue is lightly golden brown.
- Cool completely before serving.
Notes
- For a firmer set, chill the pudding for at least 4 hours before serving.
- You can substitute whipped cream for the meringue topping if you prefer not to bake.
