Description
A simple, fresh coleslaw with a bright cilantro and lime dressing.
Ingredients

- 4 cups shredded cabbage mix (green and purple)
- 1/2 cup shredded carrot
- 1/4 cup mayonnaise
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1/4 cup chopped fresh cilantro
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, combine the shredded cabbage mix and carrot.
- In a small bowl, whisk together the mayonnaise, lime juice, olive oil, cilantro, sugar, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture.
- Toss everything together until the vegetables are evenly coated.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
- For a tangier flavor, add 1 teaspoon of apple cider vinegar to the dressing.
- If you prefer a thinner dressing, add 1 teaspoon of water.
