A rich and creamy eggnog infused with the comforting flavors of toasted marshmallows, perfect for a festive holiday treat.

- 4 large eggs, separated
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup mini marshmallows
- 1/4 teaspoon ground nutmeg
Instructions
- In a large bowl, whisk together egg yolks, sugar, and salt until pale and creamy.
- In a saucepan, heat milk and heavy cream over medium heat until warm but not boiling.
- Slowly temper the egg yolk mixture by whisking in about half of the warm milk mixture.
- Pour the tempered egg mixture back into the saucepan with the remaining milk mixture.
- Cook over low heat, stirring constantly, until the eggnog thickens enough to coat the back of a spoon (about 5-7 minutes). Do not boil.
- Remove from heat and stir in vanilla extract.
- Chill the eggnog thoroughly in the refrigerator.
- Just before serving, toast the mini marshmallows by placing them on a baking sheet under a broiler for 1-2 minutes, watching carefully to prevent burning.
- Stir the toasted marshmallows into the chilled eggnog.
- Serve cold, garnished with a sprinkle of nutmeg.
Notes
- For a stronger toasted marshmallow flavor, you can lightly toast the marshmallows before stirring them in.
- Eggnog can be made a day in advance and stored in the refrigerator.
