Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the beef roast dry with paper towels.
  3. In a small bowl, mix together olive oil, salt, pepper, garlic powder, rosemary, and thyme.
  4. Rub the mixture all over the beef roast.
  5. Place the roast in a roasting pan.
  6. Roast for 15 minutes at 425°F (220°C).
  7. Reduce the oven temperature to 325°F (160°C) and continue roasting for about 15-20 minutes per pound, or until a meat thermometer inserted into the thickest part registers your desired doneness (130-135°F for medium-rare, 140-145°F for medium).
