- 3-pound beef roast (such as prime rib or top sirloin)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the beef roast dry with paper towels.
- In a small bowl, mix together olive oil, salt, pepper, garlic powder, rosemary, and thyme.
- Rub the mixture all over the beef roast.
- Place the roast in a roasting pan.
- Roast for 15 minutes at 425°F (220°C).
- Reduce the oven temperature to 325°F (160°C) and continue roasting for about 15-20 minutes per pound, or until a meat thermometer inserted into the thickest part registers your desired doneness (130-135°F for medium-rare, 140-145°F for medium).
- Remove the roast from the oven and let it rest for 15-20 minutes before carving.
Notes
- For a more intense herb flavor, you can add fresh sprigs of rosemary and thyme to the roasting pan.
- Basting the roast with its own juices every 30 minutes will help keep it moist.
