Description

Ingredients

Scale
  • 6 large egg yolks
  • 1 cup granulated sugar
  • 2 cups whole milk
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Optional: 1/2 cup bourbon or rum

Instructions

  1. In a bowl, whisk together egg yolks and sugar until pale and thick.
  2. In a saucepan, heat milk, heavy cream, vanilla, nutmeg, and salt over medium heat until warm, but not boiling.
  3. Slowly temper the egg mixture by gradually whisking in about half of the warm milk mixture.
  4. Pour the tempered egg mixture back into the saucepan with the remaining milk mixture.
  5. Cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon. Do not boil.
  6. Remove from heat and stir in bourbon or rum, if using.
  7. Strain the eggnog through a fine-mesh sieve into a clean container.
  8. Chill thoroughly in the refrigerator for at least 2 hours before serving.
  9. Serve cold, garnished with extra nutmeg if desired.

Notes

  • For a thicker eggnog, use more egg yolks.
  • Ensure the custard does not boil to prevent scrambling the eggs.
  • Eggnog can be made up to 2-3 days in advance and stored in the refrigerator.
