Simple, no-bake energy bites made with chocolate and coconut.
Ingredients

- 1 cup rolled oats
- 1/2 cup shredded unsweetened coconut
- 1/2 cup ground flaxseed
- 1/2 cup peanut butter or almond butter
- 1/3 cup honey or maple syrup
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Combine all dry ingredients in a medium bowl.
- Add the peanut butter, honey or maple syrup, and vanilla extract to the bowl.
- Mix everything thoroughly until a uniform dough forms.
- Roll the mixture into small, bite-sized balls (about 1 inch diameter).
- Place the bites on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
- You can add 1-2 tablespoons of mini chocolate chips for extra texture.
- Store leftovers in an airtight container in the refrigerator for up to one week.
