Description

Simple, no-bake energy bites made with chocolate and coconut.


Ingredients

  • 1/2 cup shredded unsweetened coconut
  • 1/2 cup ground flaxseed
  • 1/2 cup peanut butter or almond butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine all dry ingredients in a medium bowl.
  2. Add the peanut butter, honey or maple syrup, and vanilla extract to the bowl.
  3. Mix everything thoroughly until a uniform dough forms.
  4. Roll the mixture into small, bite-sized balls (about 1 inch diameter).
  5. Place the bites on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving.
