Ingredients

- 2 large cucumbers
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon black vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon chili oil (optional)
Instructions
- Wash the cucumbers. Place them on a cutting board and use the flat side of a large knife or a rolling pin to smash them until they crack open.
- Tear the smashed cucumbers into bite-sized pieces. Place them in a bowl.
- In a small bowl, combine the minced garlic, soy sauce, black vinegar, sesame oil, sugar, and chili oil, if using. Mix well.
- Pour the dressing over the cucumbers. Toss gently to coat all pieces evenly.
- Serve immediately or chill for 15 minutes before serving for a colder dish.
Notes
- For extra flavor, you can add a sprinkle of toasted sesame seeds before serving.
- Adjust the amount of chili oil based on your spice preference.
