A simple recipe for Chinese-style chicken and broccoli cooked in a savory brown sauce.

- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 4 cups fresh broccoli florets
- 2 tablespoons soy sauce (for marinating)
- 1 teaspoon cornstarch (for marinating)
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 cup chicken broth
- 1/4 cup soy sauce (for sauce)
- 2 tablespoons oyster sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch (for thickening)
- 2 tablespoons cold water (for slurry)
Instructions
- In a bowl, mix the chicken pieces with 2 tablespoons of soy sauce and 1 teaspoon of cornstarch. Set aside for 10 minutes.
- In a small bowl, whisk together chicken broth, 1/4 cup soy sauce, oyster sauce, brown sugar, and sesame oil for the sauce. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
- Add broccoli florets to the skillet. Stir-fry for 3-4 minutes. Add 2 tablespoons of water and cover. Steam for 2 minutes until broccoli is tender-crisp.
- Return the cooked chicken to the skillet.
- Whisk the cornstarch and 2 tablespoons of cold water to create a slurry. Pour the sauce mixture into the skillet, then pour in the slurry.
- Stir constantly until the sauce thickens, about 1 minute.
- Serve immediately over rice.
Notes
- You can blanch the broccoli briefly before stir-frying if you prefer softer florets.
- For extra flavor, add a pinch of white pepper to the sauce mixture.
