- 1 whole chicken (about 3 pounds)
- 4 cups water
- 1 onion, quartered
- 2 carrots, roughly chopped
- 2 celery stalks, roughly chopped

- 1/2 teaspoon black pepper
Instructions
- Place the whole chicken in a large pot.
- Add water, onion, carrots, and celery to the pot.
- Season the chicken with salt and pepper.
- Bring the water to a boil over high heat.
- Reduce the heat to low, cover the pot, and simmer for 1 hour and 15 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the pot and let it rest before shredding or serving whole.
- You can strain the broth for soup later.
