- 2 cups cooked, shredded chicken
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup milk
- 1 cup shredded cheddar cheese, divided
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 cups cooked white rice
- 2 cups fresh or frozen broccoli florets, cooked until tender-crisp
- 1 tablespoon butter, melted (for topping)
- 1/4 cup breadcrumbs (for topping)
Instructions
- Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Lightly grease a 9×13 inch baking dish.
- In a large bowl, mix together the cream of chicken soup, milk, 3/4 cup of the cheddar cheese, onion powder, garlic powder, and black pepper until smooth.
- Stir in the cooked chicken, cooked rice, and cooked broccoli until all ingredients are evenly coated with the sauce.
- Pour the mixture into the prepared baking dish.
- Sprinkle the remaining 1/4 cup of cheddar cheese over the top of the casserole.
- In a small bowl, mix the melted butter and breadcrumbs. Sprinkle this mixture evenly over the cheese layer.
- Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is golden brown.
- Let the casserole rest for 5 minutes before serving.
Notes
- If using frozen broccoli, thaw and drain it well before adding it to the mixture to prevent excess liquid in the casserole.
- You can substitute cream of mushroom soup for cream of chicken soup if desired.
