A simple recipe for tender chicken and potatoes served with savory gravy.

- 2 lbs chicken pieces (bone-in or boneless)
- 1.5 lbs potatoes, peeled and quartered
- 1 large onion, chopped
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 tablespoon vegetable oil
- Salt to taste
- Black pepper to taste
Instructions
- Season chicken pieces with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Brown chicken pieces on all sides. Remove chicken and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Sprinkle flour over the onions and stir for 1 minute.
- Gradually whisk in chicken broth until smooth. Bring the mixture to a simmer.
- Return the chicken to the skillet. Add potatoes around the chicken.
- Reduce heat to low, cover, and simmer until the chicken is cooked through and potatoes are tender, about 30-40 minutes.
- Check seasoning and add more salt or pepper if needed. Serve hot.
Notes
- For thicker gravy, mix 1 teaspoon of cornstarch with 2 tablespoons of cold water and stir into the simmering gravy during the last 5 minutes of cooking.
- You can use chicken breasts or thighs for this recipe.
