Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Pour in melted butter and mix until fully moistened. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes. Remove from the oven and set aside.
  4. In a large bowl, beat the softened cream cheese and 1 cup of sugar until smooth. Mix in the vanilla extract.
  5. Beat in the eggs one at a time, mixing just until combined after each addition. Do not overmix.
  6. Pour the cream cheese mixture evenly over the warm crust.
  7. Bake for 25 to 30 minutes, or until the edges are set and the center is mostly firm.
  8. Let the bars cool completely on a wire rack.
  9. Chill the bars in the refrigerator for at least 2 hours before cutting into squares.

Notes

  • For easier cutting, chill the bars for 4 hours or overnight.
  • You can add lemon zest to the filling for a brighter flavor.
