A hearty soup recipe that captures the flavor of a cheeseburger with potatoes.

- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups diced potatoes
- 1 cup shredded carrots
- 1 teaspoon dried mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 cup cream cheese, cubed
Instructions
- Brown the ground beef in a large pot over medium heat. Drain off any excess fat.
- Add the chopped onion and minced garlic to the pot. Cook until the onion softens, about 5 minutes.
- Pour in the beef broth. Add the diced potatoes, shredded carrots, dried mustard, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.
- In a small bowl, whisk the flour with a little bit of the milk until smooth.
- Stir the flour mixture into the simmering soup. Cook, stirring constantly, until the soup thickens slightly.
- Gradually stir in the remaining milk. Heat through, but do not boil.
- Reduce the heat to low. Stir in the shredded cheddar cheese and cubed cream cheese until both are fully melted and the soup is smooth.
- Serve hot.
Notes
- For a richer flavor, use sharp cheddar cheese.
- You can substitute sweet potatoes for regular potatoes if you prefer.
