Ingredients

  • 1 sheet puff pastry, thawed
  • 1 medium butternut squash, peeled and diced
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream
  • 1 large egg
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced butternut squash with 1 tablespoon of olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes until slightly tender. Set aside.
  3. In a skillet over medium-low heat, melt the butter with the remaining 1 tablespoon of olive oil. Add the sliced onions. Cook slowly for 20 to 25 minutes, stirring occasionally, until deeply browned and sweet.
  4. Roll out the puff pastry sheet to fit a 9-inch tart pan or line a baking sheet. Trim the edges if necessary.
  5. In a small bowl, whisk together the heavy cream, egg, and Parmesan cheese.
  6. Spread the caramelized onions evenly over the pastry base. Top with the roasted butternut squash pieces.
  7. Pour the cream mixture over the squash and onions.
  8. Bake for 25 to 30 minutes, or until the crust is golden brown and the filling is set.
  9. Let the tart cool for 10 minutes before slicing and serving.

Notes

  • For easier slicing, chill the tart for 15 minutes after baking before cutting.
  • You can substitute Gruyère cheese for Parmesan if you prefer a sharper flavor.
