Description

- 1.5 lbs chicken thighs, boneless, skinless
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup chicken broth
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch
- 3 cups cooked white rice
- 2 green onions, sliced, for garnish
Instructions
- Cut the chicken thighs into bite-sized pieces.
- Heat the vegetable oil in a large skillet or pot over medium-high heat.
- Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
- Reduce the heat to medium. Add the minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
- In a small bowl, whisk together the chicken broth, soy sauce, brown sugar, and rice vinegar.
- Pour the liquid mixture into the skillet. Bring to a simmer.
- In a separate small bowl, mix the cornstarch with 2 tablespoons of cold water to create a slurry.
- Stir the slurry into the simmering broth. Cook, stirring constantly, until the sauce thickens, about 2 minutes.
- Return the cooked chicken to the skillet. Stir to coat the chicken in the sauce. Simmer for 3-5 minutes until the chicken is heated through and the sauce is caramelized slightly.
- Serve the chicken and broth over the cooked white rice. Garnish with sliced green onions.
Notes
- For extra flavor, you can marinate the chicken in 1 tablespoon of soy sauce for 15 minutes before cooking.
- If you prefer a thicker sauce, increase the cornstarch to 1.5 tablespoons.
