A rich cheesecake topped with spiced, cooked apples and caramel sauce.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/4 cup water
- 1 tablespoon lemon juice
- 2 medium apples, peeled, cored, and diced
- 1/4 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup caramel sauce
Instructions
- Preheat your oven to 350 degrees F (175 degrees C).
- Combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes. Remove from oven and let cool slightly.
- Beat the softened cream cheese and 1 cup granulated sugar in a large bowl until smooth. Beat in the vanilla extract.
- Add the eggs one at a time, mixing well after each addition. Pour the batter over the cooled crust.
- Bake for 45 to 50 minutes, or until the center is almost set. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Remove and cool completely on a wire rack.
- In a small saucepan, combine water, lemon juice, diced apples, brown sugar, and cinnamon. Cook over medium heat, stirring occasionally, until the apples are tender, about 10 minutes. Let the apple mixture cool.
- Once the cheesecake is cool, spread the cooled apple mixture over the top. Drizzle with caramel sauce before serving.
Notes
- For a smoother caramel topping, warm the sauce slightly before drizzling.
- You can substitute gingersnap crumbs for graham cracker crumbs in the crust.
