  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
  3. While the crust bakes, beat the softened cream cheese and 1/2 cup sugar until smooth. Beat in the eggs one at a time, then mix in the vanilla extract. Pour this mixture over the warm crust.
  4. In a small bowl, toss the diced apples with brown sugar, cinnamon, and nutmeg. Scatter the spiced apples evenly over the cheesecake layer.
  5. Bake for 30 to 35 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let cool for 15 minutes. Drizzle the caramel sauce over the top.
  7. Cool completely on a wire rack, then chill in the refrigerator for at least 4 hours before cutting into bars.
