  • 1 pound smoked andouille sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 12 ounces pasta (penne or rotini recommended)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, about 5 minutes. Remove sausage and set aside.
  3. Add onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in diced tomatoes, cream of mushroom soup, milk, Cajun seasoning, oregano, and black pepper. Bring the mixture to a simmer, stirring occasionally.
  6. Reduce heat to low and cook for 5 minutes, allowing the sauce to thicken slightly.
  7. Return the cooked sausage to the skillet. Stir to combine.
  8. Add the cooked pasta to the sauce. Toss gently until the pasta is fully coated.
  9. Stir in Parmesan cheese, if using. Serve immediately.
