Description

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 medium head cauliflower, riced (about 3 cups)
  • 1/2 cup chicken broth
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green onion
  • Salt and pepper to taste

Instructions

  1. Toss the chicken pieces with Cajun seasoning in a bowl.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  4. Add riced cauliflower and chicken broth to the same skillet. Bring to a simmer.
  5. Cook, stirring occasionally, until the liquid is mostly absorbed and the cauliflower is tender, about 5 minutes.
  6. Stir in the red bell pepper and green onion. Cook for 1 minute.
  7. Return the cooked chicken to the skillet and mix well. Season with salt and pepper.
  8. Divide the mixture into bowls and serve immediately.

Notes

  • You can substitute pre-riced cauliflower for fresh.
