A simple recipe for flavorful Cajun seasoned chicken served over cauliflower rice.

- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 medium head cauliflower, riced (about 3 cups)
- 1/2 cup chicken broth
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped green onion
- Salt and pepper to taste
Instructions
- Toss the chicken pieces with Cajun seasoning in a bowl.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- Add riced cauliflower and chicken broth to the same skillet. Bring to a simmer.
- Cook, stirring occasionally, until the liquid is mostly absorbed and the cauliflower is tender, about 5 minutes.
- Stir in the red bell pepper and green onion. Cook for 1 minute.
- Return the cooked chicken to the skillet and mix well. Season with salt and pepper.
- Divide the mixture into bowls and serve immediately.
Notes
- You can substitute pre-riced cauliflower for fresh.
- Adjust the amount of Cajun seasoning based on your preference for spice.
