Instructions

  1. Prepare the cactus pears by carefully peeling them and removing any spines. Cut the flesh into chunks.
  2. Place the cactus pear chunks in a blender or food processor and blend until smooth. Strain the puree through a fine-mesh sieve to remove any seeds.
  3. If desired, rim the glass with salt by rubbing a lime wedge around the edge and pressing it into salt.
  4. In a cocktail shaker, combine the cactus pear puree, tequila, lime juice, orange liqueur, and agave nectar or simple syrup.
  5. Add ice to the shaker and shake well until chilled.
  6. Fill the prepared glass with fresh ice.
