A quick and refreshing salad made with shredded cabbage and sliced cucumber.

Ingredients

Scale
  • 4 cups shredded green cabbage
  • 1 large cucumber, thinly sliced
  • 1/2 cup white vinegar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil

Instructions

  1. Place the shredded cabbage and sliced cucumber in a large bowl.
  2. In a separate small bowl, whisk together the vinegar, sugar, salt, pepper, and vegetable oil until the sugar dissolves.
  3. Pour the dressing over the cabbage and cucumber mixture.
  4. Toss gently to coat all the vegetables evenly.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a crisper texture, you can salt the cabbage lightly and let it sit for 10 minutes, then rinse and drain well before adding other ingredients.
  • You can add thinly sliced red onion for extra flavor.
