Simple recipe for spicy and cheesy buffalo chicken quesadillas.

- 1 cup cooked, shredded chicken
- 1/2 cup buffalo wing sauce
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 2 tablespoons butter or oil
Instructions
- In a bowl, mix the shredded chicken and buffalo wing sauce until the chicken is fully coated.
- Heat a large skillet over medium heat and melt half of the butter or oil.
- Place one tortilla in the skillet. Sprinkle half of the cheese over one half of the tortilla.
- Spoon half of the buffalo chicken mixture over the cheese.
- Fold the empty half of the tortilla over the filling to create a half-moon shape.
- Cook for 3 to 4 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted.
- Remove from the skillet, slice into wedges, and keep warm.
- Repeat the process with the remaining ingredients and butter/oil.
Notes
- Serve with ranch or blue cheese dressing for dipping.
- You can adjust the amount of buffalo sauce for your preferred spice level.
