Description

A classic holiday drink made with eggs, milk, cream, sugar, and brandy.


Ingredients

  • 6 large eggs, separated
  • ¾ cup granulated sugar, divided
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup brandy
  • ½ teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. In a large bowl, whisk the egg yolks with ½ cup of the sugar until thick and pale.
  2. In a medium saucepan, heat the milk and cream over medium heat until just simmering.
  3. Slowly whisk the hot milk mixture into the egg yolk mixture.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened, about 8-10 minutes. Do not boil.
  5. Remove from heat and stir in the brandy, nutmeg, and salt.
  6. In a separate bowl, beat the egg whites with the remaining ¼ cup sugar until stiff peaks form.
  7. Gently fold the beaten egg whites into the eggnog.
  8. Chill for at least 2 hours before serving.
  9. Serve cold, garnished with additional nutmeg if desired.

Notes

  • For a non-alcoholic version, omit the brandy and add 1 teaspoon of vanilla extract.
  • Eggnog can be stored in the refrigerator for up to 3 days.
