Description

  • 2 large eggs

  • 1 cup pastry cream (prepared)
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
  3. In a large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Fill each cupcake liner about two-thirds full with batter.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely in the pan for 10 minutes before transferring them to a wire rack to cool fully.
  8. Once cool, use a small knife or apple corer to remove a small core from the center of each cupcake.
  9. Fill the cavity of each cupcake with prepared pastry cream.
  10. Make the glaze: Place chocolate chips and heavy cream in a microwave-safe bowl. Microwave in 30-second intervals, stirring until smooth.
  11. Spoon or pipe a small amount of chocolate glaze over the top of each filled cupcake.
