Description

Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen blueberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a medium bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt. Mix well.
  3. Pour the melted butter, egg, and vanilla extract into the dry ingredients. Mix until just combined and crumbly.
  4. Press two-thirds of the oat mixture evenly into the bottom of the prepared pan to form the base.
  5. In a separate small bowl, gently toss the blueberries with the granulated sugar and cornstarch until the berries are lightly coated.
  6. Spread the blueberry mixture evenly over the oat base.
  7. Crumble the remaining one-third of the oat mixture over the blueberries.
  8. Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
  9. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  10. Cut into squares for serving.

Notes

  • If using frozen blueberries, do not thaw them before mixing with sugar and cornstarch.
  • For a firmer bar, chill the baked bars for at least one hour before cutting.
