- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a medium bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt. Mix well.
- Pour the melted butter, egg, and vanilla extract into the dry ingredients. Mix until just combined and crumbly.
- Press two-thirds of the oat mixture evenly into the bottom of the prepared pan to form the base.
- In a separate small bowl, gently toss the blueberries with the granulated sugar and cornstarch until the berries are lightly coated.
- Spread the blueberry mixture evenly over the oat base.
- Crumble the remaining one-third of the oat mixture over the blueberries.
- Bake for 30 to 35 minutes, or until the topping is golden brown and the filling is bubbly.
- Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
- Cut into squares for serving.
Notes
- If using frozen blueberries, do not thaw them before mixing with sugar and cornstarch.
- For a firmer bar, chill the baked bars for at least one hour before cutting.
