Description
A refreshing drink made with blueberries and ginger.
Ingredients

- 1 cup fresh blueberries
- 1 inch piece fresh ginger, peeled and sliced
- 1/2 cup water
- 1/4 cup fresh lemon juice
- 2 tablespoons honey or maple syrup (optional)
- Sparkling water or club soda, for serving
- Fresh mint sprigs, for garnish (optional)
- Ice cubes
Instructions
- Combine blueberries, ginger, and water in a small saucepan. Bring to a simmer over medium heat.
- Reduce heat and simmer for 5-7 minutes, or until blueberries have burst and softened.
- Remove from heat and let cool slightly.
- Strain the mixture through a fine-mesh sieve into a glass or pitcher, pressing on the solids to extract all the juice. Discard the solids.
- Stir in lemon juice and honey or maple syrup, if using. Adjust sweetness to your taste.
- Fill glasses with ice.
- Pour the blueberry ginger mixture over ice, filling about one-third of the glass.
- Top with sparkling water or club soda.
- Garnish with fresh mint sprigs, if desired.
Notes
- You can make the blueberry ginger syrup ahead of time and store it in the refrigerator for up to 3-4 days.
- Adjust the amount of ginger to your preference.
- For a spicier kick, add a pinch of cayenne pepper to the syrup.
