Ingredients

  • 1/4 cup honey
  • 1 cup water
  • 1 liter sparkling water or club soda
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a small saucepan, combine the blackberries, honey, and water.
  2. Bring the mixture to a simmer over medium heat.
  3. Cook for 5-7 minutes, stirring occasionally, until the blackberries soften and release their juices.
  4. Remove from heat and let cool slightly.
  5. Strain the blackberry mixture through a fine-mesh sieve into a pitcher, pressing gently on the solids to extract all the liquid. Discard the solids.
  6. Chill the blackberry syrup in the refrigerator for at least 30 minutes.
  7. To serve, fill glasses with ice.
  8. Add about 2-3 tablespoons of the blackberry syrup to each glass.
  9. Top with sparkling water or club soda.
  10. Garnish with fresh mint leaves, if desired.
  11. Stir gently and serve immediately.
